Talking about food plating the first question that arises in the mind is – What is food plating & why is it important?

In technical terms food plating is the art and process of arranging and decorating food to enhance its presentation and aesthetic appeal. But to me food plating is art on a plate hence the title. By improving the presentation, value is added to the dining experience. Chef’s and restauranteurs consider the visual presentation of food even during different stages of cooking and preparation of food in a manner of tying or sewing the meats, to the type of cut used in chopping and slicing of meats or vegetables, to using different styles of moulds.

Who does not prefer an attractive plate of food? The saying that ‘we eat with our eyes’ is in a sense true as visual impact plays a major role. It creates a way to reintroduce flavours which work well together. Plating benefits both – the chef and the establishment.

A well-presented dish can:

(1) Upscale Food (2) Enhance Dining Experience (3) Build Reputation (4) Encourage Creativity (5) Increase Profits (6) Create Free Advertising (7) Increase Appetite.

Food Plating results as a creative way of marketing your menu. Without a stylist or photographer on hand, you can be sure that your diners will be keen to capture a great looking dish. You can even encourage diners to post images online and include the name of the restaurant. Usage of effective lighting and fixtures within your dining space can make food more photogenic.

HISTORY

Elaborate presentations of food can be traced back to early centuries where food was served on silver or crystal platters alongside golden spoons and ivory bread baskets. In the 1800s, Marie-Antoine Careme, regarded as the first celebrity chef, brought in the art of plating. From that point, food presentation became increasingly important.

Soon, the rise of modern cuisine came about with a special focus on the plate. In the 20th century, chefs began moving away from heaps of food in a single dish resulting in more complex, geometry and colour-based food presentations. Over time, more chefs began adopting food plating.

In today’s time, food presentation has become more important than ever. Appreciations to social media, advertisements and cameras, stunning food presentations are instantly available to millions of eyes. In some cases, the way your food looks may be more important than how it tastes!
